Hello,
I was wondering if the INN3672C-H602 device used in the design example RDR-611 (attached) is supported in the PI Expert utility. How can I modify this design to use different outputs?

yes, it is available.
H602 is a feature code for the device. The feature codes are described on p41 of the datasheet https://www.power.com/sites/default/files/documents/innoswitch3-ep_family_datasheet.pdf
To get this device in your design:
- create a new design for InnoSwitch3-EP
- make sure to select 725V devices in the design wizard. Default setting is 750V
- for the design specs of RDR-611, INN3672C-H601 is picked by default
- click on "PI Device -> Selection" in the navigation tree on the left
- you should be able to select INN3672C-H602 from the list of devices
